Description

This Sauvignon Blanc shows lime zest and lemon flower, followed by hints of passion fruit and red capsicum on the nose. The palate adds a big hit of lemon, with traces of white currant, thyme and tomato leaf. The exquisite dry back palate lingers for ages.

Viticulture

The grapes for this Sauvignon Blanc come from four distinct blocks on our Bouldevines vineyard, each of which shows distinct characters due to subtle variations in the soil type and vine age. For our 2010 vintage, we shoot thinned early in the season to keep everything in balance. We also leaf plucked the east side of the rows to allow the morning sun into the canopy. At veraison, we plucked the fruit zone again to aid wind flow and good light inception. All this work paid off with our fruit achieving full ripeness and balance, albeit after hanging on the vines later than usual.

Vinification

The fruit for this wine was picked in the cool of early morning, destemmed and gently pressed and cold settled. The resulting clear juice was inoculated with yeast, then brought down to 12°C for fermentation. We kept the portions from the different vineyard blocks separate and fermented them mostly to dryness, only stopping the ferments once a crisp balance had been reached. Two of the portions were removed from the lees after ferment, and two were kept on lees for two more months to gain complexity. The wine was then blended, minimally filtered and bottled.
